Coffee from the Popayan region is grown on carefully selected farms. The beans are delivered from the farmers in dry parchment, then processed at the Popayan mill and transported for decaffeination.
To remove caffeine from coffee, the beans are soaked in a special liquid based on cane sugar. The water circulates over the surface of the beans, extracting the caffeine, and then the remaining liquid evaporates.
This natural method not only removes caffeine, but also emphasizes the natural sweetness of coffee while preserving its flavor and aroma.
