Hibiscus, floral honey, and peach.

A specialty coffee from the Biloya processing station, sitting at 1,720 meters above sea level in the Kochere area of Yirgacheffe.

More than 300 farmers from the surrounding region supply cherries to this station. What makes this coffee special is the use of Oro yeast, developed by the French company Lalcafe. After sorting, the cherries are sealed in airtight bags with these yeasts and left to ferment for about 36 hours.

Oro yeast was designed specifically for coffee over four years of research. It controls the fermentation process and prevents unwanted microorganisms from interfering. The extended fermentation allows the beans to absorb metabolites that enhance complexity, acidity, and vibrancy.

In filter brewing, this coffee reveals notes of hibiscus, floral honey, and peach.
